Matthew Dillow, a native of Sydney, discovered his passion for cooking at the young age of 15. His journey in the culinary world began as an apprentice, notably through the Hospitality Training Network, an experience he values and promotes to this day.
During his formative years, Matthew honed his skills across various kitchens within the Rydges Hotels and Resorts group. His training culminated at The Rydges Thredbo Alpine Resort, where, in addition to mastering his craft, he embraced his love for snowboarding.
Following his apprenticeship, Matthew furthered his culinary expertise at esteemed establishments such as Hotel CBD, Slip Inn, Renaissance Hotels, and Hotel Nikko, among others. Remarkably, at just 21 years old, he assumed the role of Head Chef at Rydges Hotel North Sydney, where his journey began.
Driven by a desire for culinary exploration, Matthew embarked on a journey through Europe, immersing himself in diverse cuisines and cultures. His travels across Spain, Prague, England, Germany, Greece, Denmark, France, and even a brief visit to his mother’s homeland of Malta enriched his culinary perspective.

Upon returning to Australia, Matthew served as Head Chef at Barrenjoey House, Palm Beach, where he played a pivotal role in establishing the venue as a premier dining destination under the stewardship of hoteliers Brendan and Jenny Barry.
With a penchant for entrepreneurship, Matthew ventured into restaurant ownership, including The Deck Cafe Lovedale, which opened its doors in July 2013. Nestled within Gartelmann Wines in Lovedale, the cafe quickly garnered acclaim for its casual vineyard dining experience, becoming a favored spot for family gatherings and functions among locals.
Expanding his culinary ventures, Matthew introduced “Matt’s Produce”, offering a range of preserves, marinades, oils, and vinegars. Distributed across his restaurants and various cellar doors in the Hunter Valley, Matt’s Produce reflects his commitment to quality and innovation.
In addition to his culinary endeavours, Matthew operates as the house caterer for Tamburlaine’s wedding venue, overseeing both kitchen and off-site catering operations with finesse.
Ever the innovator, Matthew adapted to the challenges posed by the Covid-19 pandemic by introducing “Degustation to your Door.” This innovative concept, featuring live cooking demonstrations on Facebook, garnered widespread acclaim and expanded his reach even during lockdowns.
In December 2020, Matthew acquired Gartelmann Wine business and the accompanying 20-acre property, further solidifying his presence in the Hunter Valley. With a dedicated team of over 50 staff and a commitment to quality, Matthew continues to push boundaries in the culinary world.
Renowned for his boundless energy and willingness to support others, Matthew remains a fixture in the hospitality industry. His advice to aspiring entrepreneurs underscores the importance of teamwork and collaboration, a philosophy that has guided his own success.
